There’s a rhythm to building a great coffee program, and it lives in the details. Grind size shifts by a fraction. Extraction runs a second longer. The flavour opens up - or falls flat. So you taste again. You ask questions. You refine.
Great coffee doesn’t just land on a menu fully formed. It’s tested, challenged and calibrated with intention. It’s shaped through repetition and a willingness to go back to the start until it’s right.
As we look ahead to the year to come, this is where it begins: hands on the machine, cups on the counter, standards set from the top down. Because if we expect our teams to care deeply about every detail, that responsibility starts with us.
